2022 Tupelo is ready and has a very nice taste. It is a good representation of true Tupelo. Unfortunately, we don't have a lot of it. We had a couple of late frost's that really affected our harvest. What is raw honey?  Raw honey is "honey as it exists in the beehive"  Raw honey simply means it is not processed, heated or filtered . We coarsely strain our honey.
What is the white stuff at the top of my honey bottle?  Honey foam is air bubbles that have trapped some pretty great properties of honey like pollen, propolis, and wax. There is nothing wrong with your honey and you can eat the foam.
